47: Cooking

I love trying new recipes, but I tend to stick to my regular rotation. This week my mom and brother were spending the night, and I decided to try a recipe that I had been given by my friend Abbey but hadn’t made yet.

One Skillet Creamy Sun-Dried Tomato Chicken and Orzo. It is a lot of name for a dish that wasn’t actually that hard to make. While the original recipe called for spinach, I used arugula as I just like it better. And I didn’t use the oil-packed sun dried tomatoes, just the dehydrated ones I usually buy from Trader Joes.

Since we were 4 people eating the dish, I should have made a side and a starter however we made it work. It is the perfect sized dish for 2 people and maybe some lunch leftovers (which is how I prefer my recipes these days).

For the Super Bowl we will be eating Chili Cheese dip which is all I need to be happy. And Valentines Day Jeff will grill steaks, I’m glad he likes to grill even in cold temps. A week or two ago I also used this peanut sauce recipe for a pasta dish, and have used this spicy pork recipe once in the past and plan to recreate it in the coming weeks.

  1. I made the same recipe recently and absolutely loved it! I love Tieghan’s recipes. My go-to lately has been sheet pan dinners. Easy, no fuss, fewer pans to clean. And Lindsay’s Korean BBQ Beef at Pinch of Yum is in steady rotation around here too.

    Another fave? Grilled Tequila Lime Chicken from the Cookie Rookie. It’s a copycat recipe of Applebee’s Fiesta Lime Chicken but I think the copycat version is even better than the original!

    1. It takes quite a bit of convincing for me to actually see a new recipe, buy the ingredients for it, and finally make it. Its probably a 3 week ordeal, even though I am fully capable of doing it almost any day of the week.
