32: Cooking

I have yet to bake during quarantine, and considering Minnesota is technically no longer on Shelter in Place, I guess I won’t be taking part in that tradition. I did have 2 awesome salads in the last week, I made variations of this Panzanella Salad, and this Thai Peanut Salad . I will continue adjusting these recipes all summer based on what I have on hand. I also made.. Experimenchilads this week, aka I had a wheel of Queso Fresco to use, and didn’t know what to do with it.

I sauteed red onion, 2 red peppers, and some chorizo beef with half the quesco fresco as a filling. Then rolled the tortillas with enchilada sauce and more queso fresco on top. It turned out pretty darn good for using up an accidental purchase. (Queso Fresco is not the cheese that is in Queso Dip, I knew this, not everyone does).

Do you have any favorite recipes I need to try?

  1. Yum! Those enchiladas sound really good! We love Mexican food! I have not really baked much during quarantine either. I made some monster cookies for Phil and Paul earlier in the quarantine and a couple of loaves of banana bread with bananas that were over ripe. But that’s about it. I am not a huge baker, though, as GF baking can be super frustrating and it’s best for me not to have lots of sweets around!

    I love the Thai salad recipe you mention. I need to make it again soon! A couple of fave recipes right now: Korean BBQ Beef Bowls and Sesame Beef & Broccoli (both from Pinch of Yum) and Tequila Lime Chicken (from The Cookie Rookie).
