I have yet to bake during quarantine, and considering Minnesota is technically no longer on Shelter in Place, I guess I won’t be taking part in that tradition. I did have 2 awesome salads in the last week, I made variations of this Panzanella Salad, and this Thai Peanut Salad . I will continue adjusting these recipes all summer based on what I have on hand. I also made.. Experimenchilads this week, aka I had a wheel of Queso Fresco to use, and didn’t know what to do with it.
I sauteed red onion, 2 red peppers, and some chorizo beef with half the quesco fresco as a filling. Then rolled the tortillas with enchilada sauce and more queso fresco on top. It turned out pretty darn good for using up an accidental purchase. (Queso Fresco is not the cheese that is in Queso Dip, I knew this, not everyone does).
